
We took a short trip to WholeFoods this afternoon and picked up some Center-Cut Tenderloin, for just $4.99 a piece. We decided to use the Herb-Coated Filet Mignon recipe by EatingWell. I had purchased 3 big huge gigantic GINORMOUS sweet potatoes a few days ago and decided I should probably use at least one of them tonight. Rather than make Oven Sweet Potato Fries, I decided to come up with a side dish of my own this time.

Unlike traditional scalloped potatoes, Scalloped Sweet Potatoes are not packed full of butter, cheese, and cream. Nonetheless, they're tasty and have a similar consistency and are sweeter of course. The creamy sauce is made with a little bit of reduced-fat cream cheese, some honey, a few tablespoons of milk and a touch of butter.
