
Tonight was a night for two new recipes; Maple Mustard Baked Chicken served with Roasted Asparagus with Pine Nuts. (That's HEB's scratch made olive bread in the background. I couldn't help it; that balsamic reduction with the asparagus was sure to be delicious with the bread and it was!)
I didn't have a rack for the chicken to cook on, so I put it on lightly oiled foil. I didn't add the oil to the breadcrumbs either thinking it didn't need it. Well, it stuck to the foil and was really hard to get off without losing the breadcr. Oops! (That's what I get for not following directions.) It still tasted fantastic. This recipe gave me a good excuse to buy the Grade B Maple too which is... wow.
The asparagus rivals that which you'd get in a gourmet restaurant.
I was so full, I didn't even eat the smaller piece of chicken that's propping up the other piece.
