Unfortunately we can't dine at a five star restaurant every night. Sometimes, I don't have time or the energy to put together a fancy meal. Tonight was one of those kind of nights where I had to cook something up quick.
I recently bought some soups to stock up the pantry for the winter weatherl. I also have a couple packages of tortellini in the fridge on hand. So I decided to combine the two and make a Roasted Red Pepper & Tomato Soup with Tortellini.

I used Roasted Red Pepper and Tomato soup by Pacific Foods, which happens to be Organic (bonus!) and low sodium (bonus too!). I cooked up some Mixed Cheese Tortellini by Buitoni and then topped it off with a bit of shredded parmesan cheese.
I measured out our portions and did a bit of math to conclude that dinner was only 220 calories!
Tip: If you choose your soups wisely, you'll find that they're usually pretty low-cal for the quantity and are quite filling too.
