Garlic-Fried Ravioli and Tomato

Even though this recipe is "fried" it is not soaked in oil nor is it greasy. Garlic-Fried Ravioli and Tomato is a full and filling meal at just 395 calories. The best part is, that it's quick and easy but tastes like it was a lot more work to create.
The 100% Whole Wheat Four Cheese Ravioli from Buitoni states that there's 2 1/2 servings per package, so for 2 packages this serves 5.

Ingredients
- 18 ounces Buitoni's 100% Whole Wheat Four Cheese Ravioli (2 packages)
- 1 large tomato, diced
- 5 tablespoons shredded Parmesan cheese
- 1 tablespoon chopped parsley
Directions
- Cook ravioli according to package instructions.
- Meanwhile, crush the tomatoes using a potato masher.
- Add salt, pepper, and oregano, and mix thoroughly.
- Strain the cooked ravioli and allow to drip off excess water.
- Heat garlic oil on med-high heat in a large skillet.
- Carefully put ravioli in the skillet and fry for about 2 minutes.
- Add the tomato/spice mixture, cook for approximate 5 minutes more, stirring occasionally.
- Serve with 1 tablespoon shredded parmesan cheese and a pinch of parsley
