Meyer Lemon Maple Marinade & Sauce

It's marinade and it can be turned into sauce! Because this marinade recipe uses pricy ingredients, you won't want to let a drop go to waste. That's why there's a sauce to make from the used marinade. If you enjoy the wonderful and fragrant smell of the marinade you'll definitely want to make the sauce too.

Marinade
Combine all the ingredients and use them to marinate buffalo or beef sirloin tip steak strips for satay.
Sauce
Once you've soaked the meat you're left with the base for a nice sauce that's similar to a teriyaki. After removing the meat from the marinade, strain into a measuring cup until it reaches the 1/4 mark. Add 1/4 cup Grade B Maple syrup and stir it all well.
Optional: Baste the meat with this mixture and let the remainder be your sauce. It's just a 50/50 mixture so you can always make more!
In a small non-stick skillet, bring the mixture to a strong boil while moving a spatula across the bottom of the pan to prevent it from sticking. Cook until it is reduced to a nice syrupy consistency. Due to the blood from the meat, it will need to be strained once more. Use the sauce over the meat or on white rice.
