Mini Chocolate Chip Cakes

These tasty mini cakes take less than 5 minutes to make. This yummy little treat is enough to satisfy your craving for something sweet without keeping the temptation of a regular full size cake around that you're likely to nibble on more than should. The real beauty of it all is that one tiny little cake is only ~128 calories.
Ingredients
- 2 tablespoons pancake mix* (50 calories)
- 2 1/2 teaspoons powdered sugar (24 calories)
- 1 1/2 teaspoons vanilla powder or extract** (20 calories)
- 1/8 teaspoon baking powder
- 2 teaspoons mini chocolate chips (34 calories)
- 2 tablespoons water
*Note: I used Golden Malted All Natural Waffle & Pancake Mix which we received as a gift with our waffle maker for our wedding. We love it; it makes the best pancakes and waffles we've ever made so we'll be buying it from now on. (Thanks Aunt Sue & Uncle James!) Your mileage may vary; no telling what other pancake mixes will turn out like, but I am fairly sure they're all similar enough that the recipe should still work for you.
**Note: If you use vanilla extract instead of powder, then reduce the amount of water to 5 teaspoons.
Directions
Using a fork mix all dry ingredients together well in a bowl that will hold at least 5 ounces. Next, carefully stir in the water without causing the mixture to coat the sides of the bowl. Top with the mini chocolate chips. If you'd prefer, gently stir them inside the mixture.
Pop the bowl in the microwave for about 45 seconds. You may need to adjust the time plus or minus 20 seconds depending on your microwave. You'll know it is cooked when the top looks spongy and is no longer wet.
